DesiccatedCoconut is ideal for use as fillers, toppings, andingredients, especially in the baking of biscuits,snack bars, cakes, cookies, and so on.
The value ofDesiccated Coconut lies in the fat content.Desiccated Coconut is categorized intofull-fat (high fat) orreduced-fat (low fat). “High FatDesiccated Coconut” has a minimum of 60%fat, any lesser is a reduced fat Desiccated Coconut.Generally, DC is considered a full-fat product.However, a partially defatted product, which is theby-product after extraction of the milk, is alsoavailable and commonly termed “Low FatDesiccated Coconut”. The fat content ofthis product can vary but is usually in the range of45% – 55% is a reduced fat Desiccated Coconut.
