GLF13® GSG is Glucosyl Steviol Glycosides, also named as Enzyme Modified Stevia. Steviol glycosides was extracted from Stevia rebaudiana as raw material. The glucose group was transferred from maltodextrin to steviol glycosides through the catalysis of glucosyltransferase. The food enzyme used in the manufacturing process should be aligned to the description given in the CEP Panel opinion, i.e. ‘Cyclomaltodextrin glucanotransfer-ase (EC 2.4.1.19) derived from a non-GMO strain of Anoxybacillus caldiproteolyticus St-88’. The process does not use any solvents or processing aids not approved for use in food processing. Enzyme treatments can produce multiple glucosyl Stevia glycosides (more than 1-20), which can be used as food Flavors in food additives.
