According to INC’s recent statistics (2017-2018 yearbook), Iranwith a five-year average of 162,000MT counts for 13% of theworld’s dried grapes production and is among the top 3producers/exporters worldwide.
Raisins are mostly produced in the northern parts of Iran andvary in color, shape and taste from east to west. The harvestusually starts mid-September. There are mainly five types ofraisins available for exports:
Golden (akaAngori)Sultana (akaTizabi)Malayeri (akaLight Sultana)Sundried (akaAftabi)Kashmari/Golden Kashmari (aka Green Long/Golden Long)
With the exception of Sundried raisins which are naturally dried,all other varieties are dipped in the potassium carbonatesolution to eliminate the oily cover on the skin of the berriesand expedite the drying process thus retaining a lighter color inthe final product.
Compared to other counterparts in the region, Iranian sultanaswith a lower moisture are more free-flowing and sweeter in tastethus making them a favorite in the bakery industry, mostlybecause they do not get easily chopped in the bakery mixers. Inaddition, because of the lower moisture you will receive a bettervalue for money, meaning more raisins and less water.
