Oyster mushroom jang-ajji is everyone's favorite food with an excellent savory taste made with dried king oyster mushroom and gochujang, a representative fermented food in Korea. Oyster mushrooms are rich in dietary fibers containing vitamins and iron to help prevent obesity by suppressing the absorption of fat such as cholesterol in the colon. It also contains strong antioxidants such as beta-glucan, selenium and lectin, which are effective in anti-cancer, anti-inflmmatory, and arteriosclerosis. Drying these mushrooms enhanced the chewy texture.
