Wheat is the main cereal crop in India.Indianwheat is largely a soft/medium hard, medium protein, whitebread wheat, somewhat similar to U.S. hard white wheat. Wheatgrown in central and western India is typically hard, with highprotein and high gluten content. India also produces around1.0-1.2 million tons of durum wheat, mostly in the state ofMadhya Pradesh. Most Indian durum is not marketed separatelydue to segregation problems in the market yards. However, somequantities are purchased by the private trade at a pricepremium, mainly for processing of higher value/brandedproducts.
Wheat (Triticum) isthe second most important winter cereal in India after ricecontributing sustantially to the national food security byproviding more than 50% of the calories to the people whomainly depend on it. In histoical perspective india had madespectacular advancement in productivity and sustainability ofwheat and wheat based cropping system.The scenario of the pastten years has clearly indicated that the wheat production inthe country has soared ahead despite area remaining thesame.The wheat programme has released 399 wheat varieties,comprising bread wheat (335),durum (54),dicoccum (5) andtriticale (5), for cultivation under different productionconditions in all the wheat growing zones.

The final variety of wheat is the hardest wheat in existence,and is also the highest in protein.Durumwheat is grown primarily in North Dakota, and isused for the highest quality pastas and noodles (Italy, forexample, uses Durum wheat exclusively to make theirworld-famous pasta dishes). However, despite its high proteincontent it is very low in gluten, meaning that although it isan excellent ingredient to mix with other flours there are veryfew recipes for a purely Durum-based bread.
This grain is grown on more land area than any other commercialfood.World trade in wheat is greater than for all other cropscombined.[5] Globally,wheat is the leading source of vegetable protein in human food,having a higher protein content than other major cereals, maize(corn) or rice.[6] Interms of total production tonnages used for food, it iscurrently second to rice as the main human food crop and aheadof maize, after allowing for maizes more extensive use inanimal feed.
Next to rice, wheat is the most important food-grain of Indiaand is the staple food of millions of Indians, particularly inthe northern and north-western parts of the country.
It is rich in proteins, vitamins and carbohydrates and providesbalanced food. India is the fourth largest producer of wheat inthe world after Russia, the USA and China and accounts for 8.7per cent of the world’s total production of wheat.
