Protein concentrate obtained by pressing the aerial part ofalfalfa (Eden Hays. In one commercial process, fresh alfalfa isfirst pressed to obtain a green juice. This juice is then heatedand steamed to produce a protein coagulate. This coagulate isseparated from the liquid by centrifugation, and then dried.Alfalfa protein concentrate is used for its high content inprotein and pigments (caroten, xanthophylls).
