‘Sodium caseinate’, which is soluble salt of casein with sodium acid casein from skim milk is normally insoluble in water. Sodium caseinate is produced by neutralizing sodium carbonate or sodium hydroxide to make solubilize in water. Sodium caseinate is produced under hygienic condition by using acid casein food grade and Sodium carbonate or Hydroxide.
Uses of Sodium caseinate:
· It is soluble in water & a free flowing powder. Sodium caseinate provides good nutritional value, contains essential amino acid. It has good suitability application where protein fortified binding and emulsification is required. It is used as foaming agent in foods. It is being used for texture enhancement.
