Zanthoxylum also known as Prickly Ash has medicinal value. It is widely used in North America, India, Nepal, China, Taiwan and Japan.
It is most commonly consumed in Nepal and China as spice for taste in various pickles and soups. China use this product as ingredient in Noddles and other products as well. We like very much. It as also medicinal value so it is also called herb. It is sun-dried product so no need to roasted but have to maintain moisture level.
In Nepal it is used to extract essential oil to sell in US, India, and Europe.

Seed is used for indigestion, flatulence and depression. Pickles form the seeds are useful for cold & cough, tonsillitis, headache, fever, high altitude sickness, limbs numbness, vertigo/dizziness, diarrhoea and dysentery. Powdered dired seeds can be taken with hot water to cure diarrhoea, dysentery and stomachache. In China, an infusion in vinegar is used to expel bugs or worms infecting ear. It also can be used for cathching fishes (piscicidal).
